Preparation and Baking

    Prepare Bulgur

    Soak the fine bulgur wheat in warm water for about 30 minutes, then drain and squeeze out excess moisture.

    Make the Filling

    In a skillet, heat olive oil over medium heat. Sauté the chopped onion until translucent, then add the ground meat, cinnamon, allspice, salt, and pepper. Cook until the meat is browned. Stir in the toasted pine nuts and remove from heat to cool.

    Mix Kebbeh Dough

    In a large bowl, combine the soaked bulgur with the cooled meat mixture. Mix well until fully blended.

    Shape Kebbeh

    Grease a baking tray. Press half of the kebbeh mixture into the bottom of the tray to form a base. Spread the filling evenly on top, then cover with the remaining kebbeh mixture, pressing down gently.

    Bake

    Preheat the oven to 375°F (190°C). Bake for 30-35 minutes or until the top is golden brown. Let cool slightly before cutting into squares.

    Freeze

    Allow the baked kebbeh to cool completely. Once cooled, freeze in an airtight container or wrap in plastic wrap for later use.
