Antipasto

Method

Antipasto

  1. 1

Soak breadcrumbs in milk in a small bowl; set aside 5 minutes.

  2. 2

In a large mixing bowl, combine ground veal, pork, and beef; mix briefly to evenly distribute.

  3. 3

Add grated parmesan, chopped parsley, minced garlic, salt, and pepper; add egg; mix until just combined, being careful not to overwork the mixture.

  4. 4

    Shape meatballs

With wet hands, portion the mixture and roll into 1.5-inch meatballs; place on a parchment-lined tray.

  5. 5

Heat olive oil in a large skillet over medium-high heat. Sear meatballs on all sides until browned (about 2-3 minutes per side).

  6. 6

Pour marinara sauce into a large pot or skillet. Gently arrange the browned meatballs in the sauce so they are mostly submerged.

  7. 7

Simmer over low to medium heat for 15-20 minutes, until meat is cooked through and flavors meld.

  8. 8

Uncover, sprinkle mozzarella over the meatballs, and cover briefly until cheese melts.

  9. 9

Garnish with chopped parsley or basil if desired and serve hot with crusty bread or pasta.
