Make crust

Preheat oven to 325°F (165°C). In a bowl, combine graham cracker crumbs, 0.25 cup granulated sugar, and salt. Stir in melted butter until evenly moistened. Press into a 9-inch springform pan, reaching 1 inch up the sides. Bake 10 minutes; cool on a rack.

Prepare filling

In a large mixer, beat cream cheese on medium speed until smooth and creamy. Add 1 cup granulated sugar and beat until incorporated. Beat in sour cream and vanilla. Add eggs one at a time on low speed, mixing just until combined. Drizzle in 0.5 cup caramel sauce in small dollops over the filling; use a knife to swirl into the batter.

Bake cheesecake

Wrap the springform pan tightly in foil; place in a larger pan and pour in hot water to reach halfway up the sides (water bath). Bake at 325°F (165°C) for 60-70 minutes, or until the center barely jiggles. Turn off oven and let cheesecake rest in oven 1 hour with door closed.

Remove from water bath, cool completely at room temperature, then refrigerate at least 6 hours or overnight until set.

Toast pecan halves until fragrant. Scatter pecans over the top, sprinkle chocolate chips, and drizzle 0.5 cup caramel sauce over the surface as desired.
