Set up a bain-marie by filling a pot with a few inches of water and placing a heatproof bowl on top to hover above the water.

In the bowl, whisk egg yolks and granulated sugar together over the simmering water until pale and thick.

Remove from heat and whisk in mascarpone cheese and vanilla extract until smooth and lump-free.

Whip the heavy cream in a separate bowl to soft peaks, then gently fold it into the mascarpone mixture until fully incorporated.

Stir in a pinch of salt and, if using, 2 tablespoons (30 ml) of liqueur (Marsala, Kahlúa, or rum) and mix to combine.

Coffee soak

Brew espresso and allow it to cool to room temperature.

If using, stir in the optional liqueur (2 tablespoons / 30 ml).

Assemble

Quickly dip each ladyfinger into the coffee, turning to moisten on both sides but not soak.

Arrange a single layer of dipped ladyfingers in a 9x13 inch dish.

Spread half of the mascarpone cream over the first layer.

Add a second layer of dipped ladyfingers.

Spread the remaining mascarpone cream over the second layer.

Dust generously with cocoa powder and sprinkle with dark chocolate shavings if using.

Refrigerate for at least 4 hours, or overnight, to let flavors meld and the dessert set.
