Method

Base Preparation

  1. 1

    Mix the Base Ingredients

In a medium saucepan, combine the heavy cream, whole milk, granulated sugar, and salt. If using, split the vanilla bean lengthwise and scrape the seeds into the mixture, adding the pod as well.

  2. 2

    Heat the Mixture

Place the saucepan over medium heat and stir occasionally until the mixture is hot but not boiling, about 5 minutes.

  3. 3

    Separate the Egg Yolks

In a separate bowl, whisk the egg yolks until they are pale and slightly thickened, about 2 minutes.

  4. 4

    Temper the Egg Yolks

Gradually pour about 1 cup of the hot cream mixture into the egg yolks while whisking constantly. This will temper the yolks and prevent them from scrambling.

  5. 5

    Combine Mixtures

Pour the tempered yolk mixture back into the saucepan with the remaining cream mixture, whisking to combine.

Cooking and Cooling

  1. 6

    Cook the Custard

Cook the mixture over medium-low heat, stirring constantly with a wooden spoon or spatula, until it thickens enough to coat the back of the spoon, about 10-15 minutes.

  2. 7

    Strain the Mixture

Remove the saucepan from heat and strain the mixture through a fine-mesh sieve into a clean bowl to remove the vanilla bean pod and any cooked egg bits.

  3. 8

    Cool the Custard

Allow the custard to cool at room temperature for about 30 minutes, then cover and refrigerate for at least 4 hours or overnight.

Churning and Freezing

  1. 9

    Churn the Ice Cream

Once the custard is completely chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions, typically about 20-25 minutes.

  2. 10

    Freeze the Ice Cream

Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until firm.

  3. 11

    Serve

Scoop the vanilla ice cream into bowls or cones and enjoy!
