Potatoes

Truffle Oil

Method

Preparation

  1. 1

    Prepare the Potatoes

Wash and peel the Russet potatoes. Cut them into thin strips (about 1/4 inch thick) to create fries. Place the cut fries in a large bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Cooking

  1. 2

    Fry the Potatoes

After soaking, drain the fries and pat them dry with paper towels. Heat oil in a deep fryer or a large, heavy-bottomed pot to 350°F (175°C). Carefully add the fries in batches, frying until golden brown and crispy, about 3-5 minutes per batch. Remove with a slotted spoon and drain on paper towels.

  2. 3

    Season the Fries

While the fries are still hot, sprinkle them with salt. Drizzle the truffle oil over the fries, tossing gently to coat them evenly.

Serving

  1. 4

    Garnish and Serve

Transfer the seasoned fries to a serving platter. Top with grated Parmesan cheese, chopped parsley, and freshly ground black pepper. Serve immediately while hot.
