Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips (about 1/4 inch thick) to create fries. Place the cut fries in a large bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Fry the Potatoes
After soaking, drain the fries and pat them dry with paper towels. Heat oil in a deep fryer or a large, heavy-bottomed pot to 350°F (175°C). Carefully add the fries in batches, frying until golden brown and crispy, about 3-5 minutes per batch. Remove with a slotted spoon and drain on paper towels.
