Method

Cake Layers

  1. 1

    Prepare the Oven and Pans

Preheat your oven to 350°F (175°C). Grease and flour six 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

  3. 3

    Combine Wet Ingredients

In another bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla extract until well combined.

  4. 4

    Combine Mixtures

Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Stir in the boiling water until the batter is smooth.

  5. 5

    Bake the Layers

Divide the batter evenly among the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Chocolate Filling

  1. 6

    Melt the Chocolate

In a heatproof bowl, combine the dark chocolate and heavy cream. Microwave in 30-second intervals, stirring in between, until melted and smooth.

  2. 7

    Whip the Filling

Allow the mixture to cool slightly, then beat in the powdered sugar and unsalted butter until light and fluffy.

Fudge Frosting

  1. 8

    Prepare the Frosting

In a large bowl, mix together the cocoa powder and unsalted butter until smooth.

  2. 9

    Add Sugar and Cream

Gradually add the powdered sugar and heavy cream, mixing until well combined. Stir in the vanilla extract until the frosting is light and fluffy.

Assembly

  1. 10

    Layer the Cake

Place one cake layer on a serving plate. Spread a layer of chocolate filling on top. Repeat with the remaining cake layers, stacking them and filling in between.

  2. 11

    Frost the Cake

Once all layers are stacked, spread the fudge frosting evenly over the top and sides of the cake. Smooth out the frosting with a spatula.

  3. 12

    Chill and Serve

Refrigerate the cake for at least 30 minutes to set the frosting. Slice and serve.
