Seafood Preparation

    Prepare the Lobster

    Bring a large pot of salted water to a boil. Add the lobsters and cook for about 8-10 minutes or until they turn bright red. Remove from water and let cool. Once cool, remove the meat from the claws and tail.

    Cook the Shrimp

    In a medium pot, bring water to a boil. Add the shrimp and cook for about 2-3 minutes until they turn pink and opaque. Drain and cool. Peel the shrimp and set aside.

    Prepare King Crab Legs

    If using frozen king crab legs, thaw them in the refrigerator overnight. To heat, steam for about 5-7 minutes or until heated through. Crack open the legs and remove the meat.

    Shuck the Oysters

    Using an oyster knife, carefully open each oyster and place it on a serving platter, ensuring the liquor remains in the shell.

    Prepare Poke

    In a bowl, combine diced tuna or salmon with soy sauce, sesame oil, and any additional desired toppings. Toss to combine and set aside.

    Make Mignonette Sauce

    In a small bowl, combine minced shallots, red wine vinegar, and a pinch of salt. Mix well and let sit for at least 30 minutes before serving.

    Prepare Cocktail Sauce

    In a bowl, mix together ketchup, horseradish, lemon juice, and Worcestershire sauce. Adjust the seasoning to taste and refrigerate until ready to serve.
