Prepare the Shallots
Peel and thinly slice the shallots. Set aside.

Cook the Bacon
In a skillet over medium heat, cook the bacon slices until crispy, about 6-8 minutes. Remove and drain on paper towels.

Make the SALT Sauce
In a mixing bowl, combine mayonnaise, garlic powder, smoked paprika, lemon juice, and salt. Mix well until smooth and refrigerate until needed.

Form the Beef Patties
In a large bowl, combine the ground beef, salt, and black pepper. Divide the mixture into 4 equal portions and shape each into a patty.

Toast the Buns
Lightly toast the brioche buns on the grill or in a toaster until golden brown.

Assemble the Burgers
Spread a generous amount of SALT sauce on the bottom half of each toasted brioche bun. Add the cooked beef patty with melted gouda, followed by crispy bacon and sliced shallots. Top with the other half of the bun.
