Prepare the Fish

Season the Fish
Pat the red grouper fillets dry with paper towels. Season both sides of the fillets with salt and black pepper.

Sear the Fish
In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, carefully place the seasoned fillets in the skillet. Sear for about 4-5 minutes on each side, or until the fish is golden brown and flakes easily with a fork.

Add Lemon Juice
In the last minute of cooking, drizzle the lemon juice over the fillets, allowing it to infuse the flavor.
Prepare the Signature Sauce

Add Capers and Wine
Stir in the capers and white wine. Let the sauce simmer for about 5 minutes until slightly reduced.

Finish with Parsley
Remove from heat and stir in the chopped parsley. This will be the sauce for the grouper.

Preheat Oven
Preheat your oven to 400°F (200°C).

Season Asparagus
Place the trimmed asparagus on a baking sheet. Drizzle with olive oil, and sprinkle with salt, black pepper, and lemon zest. Toss to coat evenly.

Roast Asparagus
Roast in the preheated oven for about 15-20 minutes, or until tender and slightly crispy.
