Preparing the Scallops

Season the Scallops
Sprinkle salt and black pepper on both sides of the scallops.
Cooking the Scallops

Heat the Pan
Heat a skillet or frying pan over medium-high heat and add olive oil.

Making the Signature Sauce

Melt the Butter
In the same pan used for the scallops, reduce heat to medium and add the unsalted butter. Let it melt.

Finish the Sauce
Stir in lemon juice and fresh parsley, and remove from heat. This will be your signature sauce.
Preparing the Signature Side

Blanch the Asparagus
Bring a pot of salted water to a boil and add the asparagus. Cook for about 3-4 minutes until bright green and tender.

Place the seared scallops on a plate, drizzle with signature sauce, and serve alongside the sautéed asparagus.
