Prepare the Miso Glaze

Combine Ingredients
In a medium bowl, whisk together the white miso paste, mirin, sake, brown sugar, and soy sauce until smooth and well combined.

Marinate the Cod
Place the cod fillets in a shallow dish and pour half of the miso glaze over them. Ensure the fillets are fully coated. Cover and refrigerate for at least 30 minutes, allowing the flavors to meld.
Cook the Cod

Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Baking Sheet
Line a baking sheet with parchment paper or lightly grease it with olive oil to prevent sticking.

Season the Cod
Remove the cod fillets from the marinade, letting excess glaze drip off. Season both sides with salt and black pepper.

Bake the Cod
Place the cod fillets on the prepared baking sheet. Brush the tops with the remaining miso glaze. Bake in the preheated oven for 12-15 minutes or until the fish is opaque and flakes easily with a fork.

Carefully transfer the cooked cod to individual plates. Garnish with chopped scallions and serve with lime wedges on the side.
