Prepare the Lobster

In a large pot, bring water to a boil. Add the lobster tails and cook for about 8-10 minutes or until they turn bright red. Remove from water and let cool slightly before removing the meat from the shells.

Preheat the oven to 400°F (200°C). Toss the fresh asparagus with olive oil, garlic powder, salt, and pepper. Spread them on a baking sheet and roast for 10-12 minutes until tender and slightly crispy.

In a heatproof bowl, whisk together the egg yolks, lemon juice, and Dijon mustard. Place the bowl over a pot of simmering water (double boiler) and whisk constantly until the mixture thickens.
