Prepare Lobster Salad

    Cook Lobster

    If using raw lobster, boil a pot of salted water, and cook the lobster for about 8-10 minutes until it turns bright red. Remove from water and let it cool. Extract the meat and chop it into bite-sized pieces.

    Mix Salad Ingredients

    In a mixing bowl, combine the chopped lobster meat, finely chopped celery, and fresh herbs. Add mayonnaise, Old Bay seasoning, and season with salt and black pepper to taste. Mix well to combine all ingredients evenly.

Prepare Croissants and Grilled Lemon

    Grill Lemon

    Preheat a grill or grill pan over medium heat. Cut the lemon in half and place it cut-side down on the grill. Grill for about 3-4 minutes until grill marks appear and it becomes slightly caramelized. Remove from heat.

    Prepare Croissants

    While the lemon is grilling, split the butter croissants in half. Brush the insides with melted butter and place them cut-side down on the grill for about 1-2 minutes until they are golden and crispy.

Assemble Croissant Rolls

    Remove the grilled croissants from the grill and fill each with a generous scoop of the lobster salad mixture.
