    Cook the Lobster

    In a large pot, bring water to boil. Add the lobster tails and cook for about 6-8 minutes until they turn bright red. Remove from pot, let cool, and then remove the meat from the shells, chop into bite-sized pieces, and set aside.

    Sauté Vegetables

    In the same pot, melt the butter over medium heat. Add the chopped onion, celery, carrot, and minced garlic. Sauté for about 5 minutes until the vegetables are softened.

    Add Tomato Paste

    Stir in the tomato paste and cook for another 2-3 minutes, allowing the flavors to meld.

    Add Stock and Wine

    Pour in the fish or seafood stock and white wine. Add the bay leaves, thyme, salt, and black pepper. Bring to a simmer and let it cook for about 20 minutes.

    Blend the Soup

    Remove the bay leaves from the pot. Using an immersion blender, blend the soup until smooth. If using a regular blender, allow the soup to cool slightly before blending in batches.

    Add Cream and Lobster

    Stir in the heavy cream and add the chopped lobster meat back into the soup. Simmer for an additional 5 minutes to heat through.
