Lamb Lollipops

    Prepare the Lamb

    Preheat your oven to 150°C (300°F). Rub the lamb shank with olive oil, minced garlic, chopped rosemary, salt, and black pepper.

    Roast the Lamb

    Place the lamb shank in a roasting pan and cover it with foil. Roast in the preheated oven for 3-4 hours, or until the meat is tender and falling off the bone.

    Rest the Lamb

    Once cooked, remove the lamb from the oven, let it rest for 15-20 minutes before slicing into lollipops.

Yukon Gold Mashed Potatoes

    Prepare the Potatoes

    Peel and chop the Yukon Gold potatoes into even-sized chunks. Place them in a large pot and cover with cold water.

    Cook the Potatoes

    Bring the pot to a boil and simmer for 15-20 minutes until the potatoes are tender. Drain the potatoes.

    Mash the Potatoes

    In the same pot, add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Roasted Carrots

    Prepare the Carrots

    Preheat your oven to 200°C (400°F). Peel and cut the carrots into sticks.

    Season the Carrots

    In a bowl, toss the carrots with olive oil, honey, salt, and black pepper.

    Roast the Carrots

    Spread the carrots on a baking sheet and roast in the oven for about 20-25 minutes, or until they are tender and caramelized.

Signature House Demi Sauce

    Sauté Shallots

    In a saucepan over medium heat, melt butter and add finely chopped shallots. Sauté until translucent.

    Add Wine and Reduce

    Pour in the red wine and thyme, and bring to a simmer. Reduce the wine by half.

    Finish the Sauce

    Add beef stock, salt, and black pepper. Continue to simmer until the sauce thickens slightly, about 15-20 minutes.
