Prepare the Cheese Grits

Add Cream and Cheese
Once the grits are cooked, stir in 1 cup of heavy cream, 1 cup of cheddar cheese, and 2 tablespoons of butter. Mix until smooth and creamy. Keep warm.
Cook the Shrimp & Bacon

Cook the Bacon
In a large skillet over medium heat, add 4 slices of Benton’s bacon. Cook until crispy, then remove from the pan and crumble into pieces. Leave the bacon grease in the skillet.

Sauté the Shrimp
In the same skillet, add 1 tablespoon of olive oil and minced garlic (3 cloves). Sauté for about 30 seconds until fragrant. Add 1 pound of Key West shrimp, 1 teaspoon of salt, and 1 teaspoon of black pepper. Cook for about 3-4 minutes until shrimp turn pink and are cooked through.

Finish with Lemon Juice
Remove the skillet from heat and drizzle with 1 tablespoon of lemon juice. Stir to combine with the shrimp and bacon.
Garnish and Serve

Prepare Scallions
Chop 2 stalks of scallions finely.

Spoon the creamy cheese grits onto plates, top with the sautéed shrimp and bacon mixture, and garnish with chopped scallions.
