Method
Preparing the Salad Base
- 1
Chop the Tomatoes
Wash and chop the various types of tomatoes into bite-sized pieces. Place them in a large salad bowl.
- 2
- 3
Add Roasted Corn
If using canned corn, drain and rinse. If using fresh corn, roast it on a grill or stovetop until slightly charred, then cut the kernels off the cob and add to the salad bowl.
- 4
Chop Fresh Herbs
Finely chop the fresh herbs of your choice (basil, parsley, etc.) and add to the salad bowl.
Adding Dressings and Toppings
- 5
Mix in Pesto
Add the nut-free pesto to the salad base and gently toss to combine all ingredients.
- 6
Incorporate Whipped Cheese
Dollop the whipped cheese over the salad and carefully fold it in, ensuring it mixes without breaking the salad.
- 7
Sprinkle Seeds and Bacon
Evenly sprinkle the sunflower seeds and bacon crumbles over the salad for added crunch and flavor.
- 8
Finish with Lemon Zest
Grate lemon zest over the top of the salad for a fresh finish and toss gently before serving.
