    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon until well combined.

    Combine Wet Ingredients

    In another bowl, mix together the oil, eggs, mashed bananas, crushed pineapple, and vanilla extract until smooth.

    Combine Mixtures

    Pour the wet mixture into the dry ingredients and mix until just combined. Do not overmix.

    Bake the Layers

    Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

    Cool the Layers

    Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, remove from pans and transfer to wire racks to cool completely.

Filling

    Prepare Pineapple Filling

    In a saucepan over medium heat, combine the crushed pineapple, sugar, cornstarch, and water. Stir well until mixture thickens, about 5-7 minutes. Remove from heat and let cool.

Frosting

    Make the Frosting

    In a large mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, alternating with evaporated milk until smooth and fluffy. Mix in vanilla extract.

    Add Coconut and Pecans

    Fold in the shredded coconut and chopped pecans into the frosting mixture until evenly distributed.

Assembly

    Assemble the Cake

    Place one cake layer on a serving plate. Spread a layer of the pineapple filling on top, then add a second cake layer. Repeat with more filling and top with the final cake layer.

    Frost the Cake

    Using the coconut pecan frosting, frost the top and sides of the layered cake. Decorate with additional coconut and pecans if desired.
