Make the Crepe Batter
In a mixing bowl, whisk together the all-purpose flour and salt. In a separate bowl, beat the eggs and then add the milk. Gradually combine the wet ingredients with the dry ingredients until smooth. Let the batter rest for 30 minutes.

Cook the Crepes
Heat a non-stick skillet over medium heat and add a small amount of butter. Pour approximately 1/4 cup of crepe batter into the skillet, tilting to spread evenly. Cook for about 2 minutes until the edges begin to lift, then flip and cook for another minute. Repeat with remaining batter.

Prepare the Filling
In a mixing bowl, combine the shredded rotisserie chicken, whipped Boursin cheese, crumbled bacon, and diced tomato. Mix until well combined.

Assemble the Crepes
Place a generous spoonful of the chicken mixture onto each crepe, then fold the crepe over the filling. Place on a serving plate.

Garnish
Sprinkle crumbled parmesan cheese over the top of the filled crepes and serve with grilled lemon wedges on the side for squeezing over the crepes.
