    Start by peeling the russet potatoes. Then, grate them using a box grater or a food processor until you have about 4 cups of shredded potatoes.

    Place the grated potatoes in a bowl of cold water, swish them around to remove excess starch, and then drain. Rinse under cold water and drain again. Pat the potatoes dry with a clean kitchen towel.
