Prepare the Slaw

    Mix the Slaw Ingredients

    In a large mixing bowl, combine the shredded cabbage, grated carrot, and sliced red onion.

    Make the Dressing

    In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, salt, and pepper. Adjust seasoning to taste.

    Combine Slaw and Dressing

    Pour the dressing over the cabbage mixture and toss well to coat evenly. Set aside to marinate while you prepare the grouper.

Cook the Grouper

    Prepare the Grouper

    Pat the grouper fillets dry with paper towels and season both sides generously with blackening spice.

    Heat the Oil

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Cook the Grouper

    Add the seasoned grouper fillets to the skillet. Cook for about 3-4 minutes on each side, or until the fish is cooked through and has a blackened crust. Remove from the skillet and let rest.

Assemble the Sandwich

    In the same skillet, add butter and toast the brioche buns until golden brown.

    On the bottom half of each toasted brioche bun, place a blackened grouper fillet. Top with a generous scoop of house slaw, and then place the top half of the bun on.
