Method

Preparing the Salmon

  1. 1

    Seasoning the Salmon

Pat the salmon fillets dry with paper towels. Rub olive oil over each fillet and season with salt and black pepper.

  2. 2

    Grilling the Salmon

Heat a grill pan over medium-high heat. Once hot, place the salmon fillets skin-side down on the grill. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork.

  3. 3

    Adding Lemon

During the last minute of cooking, squeeze fresh lemon juice over the salmon for added flavor.

Making the Sauce

  1. 4

    Combining Ingredients

In a small bowl, mix together the Dijon mustard, honey, soy sauce, and fresh dill until well combined.

  2. 5

    Adjusting Flavor

Taste the sauce and adjust seasoning with more honey for sweetness or more mustard for tanginess as desired.

Preparing the Side

  1. 6

    Cooking Quinoa

Rinse the quinoa under cold water. In a saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low and simmer for 15 minutes, or until quinoa is fluffy.

  2. 7

    Roasting Asparagus

Preheat oven to 400°F (200°C). Toss asparagus with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes until tender.

  3. 8

    Preparing Cherry Tomatoes

Wash the cherry tomatoes and slice them in half. They can be served fresh on the side or roasted along with the asparagus if desired.
