Prepare the Ingredients
Start by placing the slices of brioche bread on a clean cutting board. Slice the Gouda cheese into thin pieces.

Melt the Butter
In a skillet over medium heat, melt 1 tablespoon of unsalted butter.

Assemble the Sandwich
Place two slices of brioche bread in the skillet. Layer the sliced Gouda cheese evenly on top. Sprinkle fresh herbs over the cheese, then place the remaining slices of brioche bread on top.

Grill the Sandwich
Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted. Remove from skillet and let cool slightly before slicing.

Add Tomato Paste and Spices
Stir in the tomato paste, dried thyme, salt, and black pepper, cooking for another 1-2 minutes.

Combine with Lobster Stock
Pour in the lobster stock and bring to a simmer. Let it cook for about 10 minutes to meld the flavors.

Finish with Cream and Lobster
Lower the heat and add the heavy cream and the cooked lobster meat. Cook for an additional 5 minutes, stirring gently. Add fresh lemon juice just before serving.
