    Prepare the Croissant Dough

    If you are using store-bought croissant dough, roll it out and cut it into small squares (about 2x2 inches). If making from scratch, follow your preferred recipe for croissant dough.

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil over medium heat until it reaches 350°F (175°C). Use a thermometer to ensure the correct temperature.

    Fry the Beignets

    Carefully drop the squares of croissant dough into the hot oil, a few at a time, to avoid overcrowding. Fry for about 2-3 minutes on each side until they are golden brown. Remove and drain on paper towels.

    Toss with Herbs and Parmesan

    While the beignets are still warm, toss them in a bowl with the chopped fresh herbs and grated Parmesan cheese until well-coated.

    Blend the Ingredients

    In a blender or food processor, combine the avocado, Greek yogurt, lemon juice, minced garlic, and fresh herbs. Blend until smooth and creamy.

    Add salt and black pepper to taste, blending again briefly to combine. Adjust seasoning as desired.

    Transfer the Green Goddess Crema to a serving bowl and serve alongside the warm herb and Parmesan beignets.
