Potatoes

Method

Preparation

  1. 1

    Prepare the Potatoes

Wash the Russet potatoes under cold water to remove any dirt. Peel the potatoes if desired, then cut them into even-sized fries, about 1/4 to 1/2 inch thick.

  2. 2

    Soak the Fries

Place the cut fries in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.

Cooking

  1. 3

    Heat the Oil

In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to ensure the right temperature.

  2. 4

    Dry the Fries

After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.

  3. 5

    Fry the Potatoes

Carefully add a handful of fries to the hot oil. Do not overcrowd the pot. Fry for about 4-6 minutes until golden brown, stirring occasionally for even cooking.

  4. 6

    Drain the Fries

Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to absorb excess oil.

  5. 7

    Season the Fries

While the fries are still hot, sprinkle them with salt, black pepper, garlic powder, and paprika to taste. Toss gently to ensure even coating.
