Method

Filet

  1. 1

    Prepare the Filet

Heat a skillet over medium-high heat and add olive oil.

  2. 2

    Season the Filet

Season the filet mignon with salt and black pepper on both sides.

  3. 3

    Cook the Filet

Once the oil is hot, place the filet in the skillet and cook for about 4-5 minutes on each side for medium-rare, adjusting time for desired doneness.

  4. 4

    Rest the Filet

Once cooked, remove the filet from the skillet and let it rest for a few minutes before slicing.

Eggs

  1. 5

    Prepare the Eggs

In the same skillet used for the filet, reduce heat to medium-low and add butter.

  2. 6

    Cook the Eggs

Once the butter is melted, crack the eggs into the skillet. Season with a pinch of salt and black pepper. Cook until the whites are set but the yolks are still runny, about 3-4 minutes.

Hash Browns

  1. 7

    Prepare the Potatoes

Grate the russet potatoes using a box grater or food processor. Rinse under cold water to remove excess starch and then dry them thoroughly with a clean kitchen towel.

  2. 8

    Cook the Hash Browns

In a separate skillet, heat vegetable oil over medium heat. Add the grated potatoes and flatten them out. Season with salt and black pepper. Cook for about 5-7 minutes on one side until golden brown, then flip and cook for another 5-7 minutes until the other side is golden brown and crispy.
