Wash and Chop the Vegetables
Thoroughly wash all vegetables under cold running water. Peel the carrots and cut them into thin rounds. Slice the zucchini into half-moons. Remove the stems from the bell peppers, discard the seeds, and chop them into bite-sized pieces. Cut the broccoli into smaller florets.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds or until fragrant. Add the chopped carrots and bell peppers to the skillet and cook for 3-4 minutes, stirring occasionally.

Add in the zucchini and broccoli florets to the skillet. Continue to cook for an additional 5-7 minutes, stirring frequently until all vegetables are tender but still crisp.

Sprinkle the salt, black pepper, dried oregano, and red pepper flakes over the sautéed vegetables. Stir to combine and let it cook for another minute to ensure the flavors meld together.
