Method
Doughnut Base Preparation

Activate Yeast
In a small bowl, combine warm water (110°F) and active dry yeast. Let it sit for about 5-10 minutes until foamy.

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, and salt.

Combine Wet Ingredients
In another bowl, combine the melted unsalted butter, milk, egg, vanilla extract, and the foamy yeast mixture.

Combine and Knead Dough
Pour the wet mixture into the dry ingredients. Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape Doughnuts
After the dough has risen, roll it out to about 1/2 inch thick. Use a doughnut cutter or two round cutters to cut out doughnuts. Place them on a baking sheet lined with parchment paper.

Second Rise
Cover the shaped doughnuts with a cloth and let them rise for another 30-45 minutes.

Fry Doughnuts
Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the doughnuts in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.
Mixed Berry Jam Preparation

Combine Ingredients
In a saucepan, combine mixed berries, granulated sugar, and lemon juice.

Cook Jam
Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens, about 20-25 minutes.

Cool Jam
Remove from heat and let it cool before transferring to a jar for storage.
Chantilly Cream Preparation

Whip Cream
In a mixing bowl, combine heavy whipping cream, powdered sugar, and vanilla extract. Whip with an electric mixer until soft peaks form.

Chill
Keep the Chantilly cream in the refrigerator until ready to use.
Assembly

Fill Doughnuts
Once the doughnuts have cooled, use a pastry bag or a small spoon to fill them with mixed berry jam.

Top with Cream
Pipe or spoon the Chantilly cream on top of each filled doughnut.
