Fish Preparation

    Season the Fish

    Pat the Chilean sea bass fillets dry with paper towels. Season both sides generously with salt and black pepper.

    Sear the Fish

    Heat olive oil in a large skillet over medium-high heat. When the oil is hot, add the fish fillets, skin-side down. Cook for 4-5 minutes until the skin is crispy and the fish is opaque halfway up the sides. Carefully flip the fillets and cook for an additional 3-4 minutes or until cooked through.

    Rest the Fish

    Remove the fish from the pan and let it rest for a couple of minutes before serving.

Sauce Preparation

    Melt the Butter

    In the same skillet used for the fish, reduce the heat to medium. Add butter and allow it to melt.

    Add Garlic and Capers

    Once the butter is melted, add minced garlic and capers. Sauté for about 1-2 minutes until the garlic is fragrant.

    Finish the Sauce

    Stir in the chopped parsley and lemon juice. Cook for an additional minute, then remove from heat.

Side Preparation

    Prepare the Asparagus

    Wash and trim the tough ends of the asparagus. Toss them in olive oil and salt.

    Sauté the Asparagus

    In a separate skillet, heat over medium heat and sauté the asparagus for about 5-7 minutes until tender and slightly browned.
