Chicken

Mashed Potatoes

Creamy Jalapeño Gravy

Method

Chicken

  1. 1

    Marinate the Chicken

In a large bowl, combine the buttermilk, garlic powder, onion powder, paprika, salt, and black pepper. Add the chicken breasts to the bowl, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 1 hour, or overnight for best results.

  2. 2

    Prepare for Frying

In a shallow dish, add the flour. Remove the chicken from the marinade, allowing excess to drip off, and dredge each piece in the flour, coating well. Set aside on a plate.

  3. 3

    Fry the Chicken

In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully add the chicken pieces to the hot oil, cooking in batches if necessary to avoid overcrowding. Fry for about 6-8 minutes on each side, or until the chicken is golden brown and cooked through. Remove from the oil and drain on paper towels.

Mashed Potatoes

  1. 4

    Cook the Potatoes

Peel and cut the russet potatoes into quarters. Place in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until tender, about 15-20 minutes. Drain the potatoes and return them to the pot.

  2. 5

    Mash the Potatoes

Add the unsalted butter, heavy cream, salt, and black pepper to the drained potatoes. Use a potato masher or fork to mash until smooth and creamy. Adjust seasoning to taste.

Creamy Jalapeño Gravy

  1. 6

    Make the Gravy

In a saucepan, melt the unsalted butter over medium heat. Whisk in the flour and cook for about 2 minutes until lightly browned. Gradually add the chicken broth while whisking to avoid lumps. Bring to a simmer and cook until thickened, about 3-5 minutes.

  2. 7

    Add Jalapeños and Cream

Stir in the diced jalapeños, heavy cream, salt, and black pepper. Simmer for an additional 2-3 minutes until heated through. Adjust seasoning if necessary.
