Method
Prepare Dumpling Filling

Prepare Lemongrass
Finely mince the white part of the lemongrass stalks and set aside.

Prepare Garlic and Ginger
Mince the garlic cloves and grate the fresh ginger.

Combine Ingredients
In a mixing bowl, combine ground chicken, minced lemongrass, garlic, ginger, sliced green onions, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
Assemble Dumplings

Fill Wonton Wrappers
Place a wonton wrapper on a clean surface. Spoon about 1 tablespoon of the chicken mixture into the center of the wrapper.

Seal Dumplings
Moisten the edges of the wonton wrapper with water, fold the wrapper in half to create a triangle, and press the edges to seal. Repeat with the remaining wrappers and filling.
Cook Dumplings

Steam Dumplings
Prepare a steamer or a pot with a steaming rack. Bring water to a boil. Place dumplings in the steamer, making sure they are not touching each other. Cover and steam for about 10-12 minutes, or until the chicken is cooked through.
Prepare Citrus Chili Sauce

Mix Sauce Ingredients
In a small bowl, whisk together lime juice, chili paste, honey, and fish sauce until well combined. Set aside.
Prepare Japanese Aioli

Mix Aioli Ingredients
In another bowl, combine mayonnaise, soy sauce, wasabi paste, and lemon juice. Mix until smooth and well combined.
