    Prepare the Ingredients

    Dice the chicken thighs into bite-sized pieces. Slice the smoked sausage into rounds. Chop the onion, carrots, celery, bell pepper, and potatoes into small cubes. Mince the garlic cloves. Trim the green beans and cut them into 1-inch pieces.

    Cook the Protein

    In a large pot or Dutch oven, melt the butter over medium heat. Add the diced chicken thighs and sausage slices. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove from the pot and set aside.

    Make the Roux

    In the same pot, add the flour and whisk it into the remaining fat. Cook for 2-3 minutes until the flour is lightly browned to create a roux.

    Add Vegetables

    Slowly pour in the chicken broth while whisking to prevent lumps. Add the chopped onion, carrots, celery, bell pepper, garlic, potatoes, and green beans. Stir to combine.

    Season the Soup

    Add the dried thyme, oregano, salt, black pepper, and bay leaves to the pot. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally.

    Finish the Soup

    After 30 minutes, return the cooked chicken and sausage to the pot. Let simmer for an additional 10 minutes. Adjust seasoning to taste, and stir in the chopped parsley before serving.
