Brunch Fries

Prepare the Potatoes
Preheat your oven to 425°F (220°C). Wash and peel the russet potatoes. Cut them into even strips to form fries.

Season and Bake
In a large bowl, toss the potato strips with olive oil, salt, black pepper, and paprika until evenly coated. Spread them out in a single layer on a baking sheet.

Bake the Fries
Bake in the preheated oven for 25-30 minutes, flipping halfway through, until they are golden and crispy.

Make the Roux
In the same skillet, add truffle oil. Whisk in the flour and cook for about 2 minutes until golden brown.

Add Milk and Seasonings
Gradually whisk in the milk, stirring constantly to avoid lumps. Add the chopped jalapeño, garlic powder, onion powder, salt, and black pepper. Bring to a simmer and cook until thickened, about 5 minutes.

Combine with Sausage
Return the cooked sausage to the skillet, stirring to combine. Keep warm on low heat until ready to serve.

Cook the Eggs
In a non-stick skillet over medium heat, melt the butter. Crack the eggs into the skillet and season with salt and black pepper. Cook until the whites are set and the yolks are still runny, about 3-4 minutes.
