    Prepare the Ingredients

    Gather all ingredients and chop the seasonal veggies into bite-sized pieces.

    Cook the Sausage

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the crumbled breakfast sausage and cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.

    Sauté the Veggies

    In the same skillet, add another tablespoon of olive oil. Add the chopped seasonal veggies and sauté until tender, about 4-5 minutes. Season with salt and pepper.

    Add Hash Browns

    Add the hash browns to the skillet with the sautéed veggies. Cook for an additional 5-7 minutes until the hash browns are crispy and golden brown. Stir occasionally to ensure even cooking.

    Combine Ingredients

    Return the cooked sausage to the skillet and mix everything together. Sprinkle the shredded gouda cheese on top and cover with a lid. Let it cook for another 2-3 minutes until the cheese is melted.

    In a separate pan, fry the eggs sunny-side up to your desired doneness.
