Method
Biscuits
- 1
Preheat Oven
Preheat your oven to 450°F (230°C).
- 2
Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, and salt.
- 3
Cut in Butter
Add the unsalted butter to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- 4
Add Milk
Pour in the milk and stir until just combined. Do not overmix.
- 5
Shape Biscuits
Turn the dough onto a floured surface and gently knead a few times. Pat into a 1-inch thick round. Use a biscuit cutter to cut out biscuits.
- 6
Bake Biscuits
Place the biscuits on a baking sheet and bake for 12-15 minutes or until golden brown.

Cook Sausage
In a large skillet over medium heat, cook the ground sausage until browned and cooked through, about 5-7 minutes.
- 8
Add Jalapeños
Add the diced jalapeños to the skillet and sauté for an additional 2-3 minutes until softened.

Sprinkle the flour over the sausage mixture and stir to coat. Cook for about 1 minute to eliminate the raw flour taste.

Gradually whisk in the milk, stirring constantly. Continue to cook until the gravy thickens, about 5-7 minutes.
- 11
Season Gravy
Season the gravy with salt, black pepper, and red pepper flakes. Adjust seasoning to taste.
