Our signature traditional bread. It's different everywhere you go. Ours is baked and about the size of a hockey puck. Served with butter and rotating berry jam.

Bannock Dough

Method

Prepare Bannock Dough

    Mix dry ingredients

    In a large mixing bowl, combine flour, baking powder, salt, and sugar.

    Add butter

    Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Add liquid

    Gradually add water (or milk), mixing just until a soft dough forms. Do not overmix.

Shape and Bake

    Preheat oven to 400°F (200°C). Lightly grease a baking sheet with vegetable oil.

    Divide the dough into 6 equal portions and shape each into a round patty, about the size and thickness of a hockey puck (roughly 3 inches across and 1 inch thick).

    Place bannock rounds on the prepared baking sheet and bake for 18–20 minutes or until golden brown and cooked through.

Serve

    Serve warm bannock with butter and a spoonful of seasonal berry jam on the side.
