1. Cook the blueberries
In a small saucepan over medium heat, combine the blueberries, chopped sage leaves, sugar, lemon juice, and water. Stir gently and simmer for 5–7 minutes until the blueberries begin to burst and the mixture thickens slightly. Remove from heat and let cool slightly.
Maple Whisky Sauce
2. Make the sauce
In a small saucepan over low heat, melt the butter, then add the maple syrup, whisky, and a pinch of salt. Stir and simmer gently for 3–4 minutes until slightly thickened. Do not boil. Remove from heat and let cool slightly.
Assembly
3. Assemble the sundae
Place two scoops of vanilla ice cream in a serving bowl. Spoon the warm sage-blueberry mixture over the ice cream. Drizzle with the maple whisky sauce. Serve immediately.
