Prepare Bannock Bread
1. Mix dough
In a large bowl, mix flour, baking powder, and salt. Gradually add water and mix until a soft dough forms.
2. Form and fry
Divide dough into 4 equal balls. Flatten each into a 1/2 inch thick disk. Heat oil in a skillet over medium heat and fry each disk until golden brown on both sides, about 2-3 minutes per side. Drain on paper towels.
Make Housemade Chili
3. Heat olive oil in a skillet over medium heat. Add diced onion and garlic, sauté for 2-3 minutes until softened.
4. Add ground beef and cook until browned, breaking it up with a spoon.
5. Stir in kidney beans, crushed tomatoes, chili powder, cumin, salt, and pepper. Simmer for 15-20 minutes, stirring occasionally.
Assemble Bannock Tacos
6. Place a bannock round on a plate. Top with a generous spoonful of chili, followed by shredded cheddar cheese, lettuce, and diced tomato. Serve immediately.
