Bannock Crackers
Method
Prepare the Salmon Mousse

Blend Ingredients
In a food processor, combine flaked BBQ salmon, softened cream cheese, sour cream, lemon juice, dill, chives, salt, and pepper. Blend until smooth and creamy.

Chill
Transfer the mousse to a bowl, cover, and refrigerate for at least 1 hour to allow the flavors to meld.
Make Bannock Crackers

Mix Dry Ingredients
In a large bowl, whisk together flour, baking powder, and salt.

Add Wet Ingredients
Gradually stir in water and oil until a soft dough forms. Knead briefly on a floured surface until smooth.

Roll and Cut
Roll out dough to about 1/8 inch thickness. Cut into desired cracker shapes using a knife or cookie cutter.

Bake
Place crackers on a baking sheet and bake at 400°F (200°C) for 10–12 minutes or until golden and crisp. Let cool before serving.

Serve chilled salmon mousse with cooled bannock crackers on the side for dipping or spreading.
