Method

Prepare Bone Marrow

    Preheat oven

    Preheat your oven to 450°F (230°C).

    Place the bison bone marrow bones on a baking sheet lined with foil or parchment paper, marrow side up.

    Drizzle olive oil over the marrow and sprinkle evenly with dried sage, smoked sea salt, and black pepper.

    Roast in the preheated oven for 15–20 minutes, until the marrow is bubbling and slightly browned on top.

Prepare Bannock Crackers

    In a mixing bowl, combine flour, baking powder, and salt.

    Add cold water and vegetable oil, stirring until a soft dough forms.

    Turn dough out onto a floured surface and knead gently for 1–2 minutes.

    Roll dough out to about 1/8-inch thickness and cut into cracker-sized pieces.

    Place on a baking sheet and bake at 400°F (200°C) for 10–12 minutes, or until golden and crisp.

Serving

    Serve roasted bison bone marrow hot with freshly baked bannock crackers on the side. Optionally, provide a small spoon or knife for scooping the marrow.
