Preparing the Tasajo

Soak the Dried Beef

Begin by soaking the dried beef (Tasajo) in water for at least 2 hours to rehydrate and soften it. Change the water halfway through for better results.

Sauté the Vegetables

In a large skillet or pot, heat a tablespoon of vegetable oil over medium heat. Add the chopped onion and bell pepper, and sauté until they are soft and translucent (about 5-7 minutes).

Add Garlic

Minse the garlic cloves and add them to the skillet. Sauté for an additional 1-2 minutes until fragrant.

Cook the Beef

Once the beef has soaked, drain it and shred it into small pieces. Add the shredded beef to the skillet and stir well to combine with the sautéed vegetables.

Add Sauces

Pour in the tomato sauce and red wine, stirring well. Cover and simmer for about 30 minutes, stirring occasionally until the beef is tender and the flavors meld together.

Season

Season with salt and pepper to taste. Remove from heat and set aside.

Peel and Slice

Peel the sweet potatoes and slice them into thin rounds or wedges, depending on your preference.

Fry the Sweet Potatoes

In a deep skillet or fryer, heat the vegetable oil over medium-high heat. Once hot, carefully add the sweet potato slices in batches, frying until they are golden brown and crispy (about 5-7 minutes).

Drain and Season

Remove the fried sweet potatoes and drain them on paper towels. Season with salt while still hot.
