Preparing the Pork

Marinating the Pork
In a large mixing bowl, combine minced garlic, olive oil, cumin, paprika, oregano, salt, black pepper, and lime juice to create the marinade.

Roasting the Pork
Preheat the oven to 150°C (300°F). Place the marinated pork shoulder in a roasting pan and cover it with aluminum foil.

Slow Roasting
Roast the pork in the preheated oven for about 4-5 hours, or until the meat is tender and easily pulls apart. Remove the foil in the last 30 minutes for a crispy crust.

Cooking the Sauce
Add the diced tomatoes, salt, and black pepper to the saucepan. Simmer for about 15 minutes until the sauce thickens. Stir in chopped cilantro and lime juice.
Serving

Once the pork is done roasting, slice it into thick pieces. Serve the pork topped with the Spanish sauce.
