Preparation of the Lobster

    Clean the Lobster

    Start by cleaning the Caribbean lobsters under cold running water. Remove any debris and rinse thoroughly.

    Sauté the Lobster

    In a large skillet, heat olive oil over medium-high heat. Add minced garlic and sauté for 1 minute until fragrant. Add the lobsters and sprinkle with salt and black pepper. Sauté for about 8-10 minutes until the lobsters are cooked through, turning occasionally. Remove from skillet and set aside.

Preparation of the Criolla Sauce

    Chop the Vegetables

    Dice the red bell pepper, green bell pepper, onion, and tomatoes into small pieces. Chop the cilantro finely.

    Cook the Sauce

    In the same skillet used for the lobster, add the chopped vegetables and sauté for 4-5 minutes until softened. Stir in the white wine, lime juice, cumin, and paprika. Allow the sauce to simmer for another 5-7 minutes, stirring occasionally until slightly thickened.

    Combine Lobster and Sauce

    Add the sautéed lobster back into the skillet with the Criolla sauce. Toss gently to coat the lobster in the sauce. Allow to cook together for an additional 2-3 minutes to let the flavors meld.

    Garnish and Serve

    Remove from heat and sprinkle chopped cilantro on top. Serve hot, accompanied by rice or crusty bread if desired.
