    Prep the Ingredients

    Start by peeling and chopping the potatoes into chunks. Dice the onion and bell peppers. Mince the garlic cloves. Slice the chorizo sausage into rounds.

    Sear the Pork Shank

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the pork shank with salt and black pepper, then add it to the pot. Sear it on all sides until browned, about 5-7 minutes. Remove from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add the diced onion, bell peppers, and minced garlic. Sauté for about 5 minutes until the vegetables are softened. Add the sliced chorizo and cook for another 3 minutes.

    Add Spices and Broth

    Stir in the paprika, cumin, and bay leaves. Pour in the chicken or vegetable broth, scraping any brown bits from the bottom of the pot.

    Braise the Pork

    Return the seared pork shank to the pot. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover and let it braise for about 1.5 to 2 hours, or until the pork is tender.

    Cook the Potatoes

    About 30 minutes before the pork is done, add the chopped potatoes to the pot. Ensure they are submerged in the liquid, cover, and continue to cook until the potatoes are tender and the pork is falling off the bone.

    Final Seasoning

    Taste the sauce and adjust seasoning with additional salt and pepper if needed. Remove bay leaves before serving.
