Preparation

    Marinade Preparation

    In a small bowl, mix together the olive oil, juice of 1 lemon, minced garlic (reserve 2 cloves for grilling), chopped fresh oregano, salt, and black pepper. This will be your marinade.

    Marinating the Swordfish

    Place the swordfish steaks in a shallow dish and pour the marinade over them. Ensure the fish is well-coated. Cover and let marinate in the refrigerator for at least 30 minutes.

    Prepare the Tomatoes

    Chop the tomatoes into small pieces and set aside. Squeeze the juice of the second lemon over them for added flavor.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat. If using a charcoal grill, make sure the coals are evenly heated.

    Grill the Swordfish

    Remove the swordfish from the marinade and grill for about 4-5 minutes on each side, or until the fish is opaque and easily flakes with a fork. During the last minute of grilling, add the reserved minced garlic on top of the fish.

    Prepare the Tomato Oregano Sauce

    In a small saucepan over medium heat, add a tablespoon of olive oil and the chopped tomatoes. Cook for about 5 minutes, stirring occasionally. Add the remaining fresh oregano and season with salt and pepper to taste.

Serving

    Plate the Dish

    Once the swordfish is grilled, remove it from the grill and let it rest for a few minutes. Serve each piece on a plate, topped with the warm tomato and oregano sauce.

    Garnish with lemon wedges and additional oregano if desired. Enjoy your grilled swordfish!
