Preparation of Fish

    Clean the Fish

    Rinse the whole fish under cold water and pat it dry with paper towels. Make sure the fish is scaled and gutted.

    Using a sharp knife, make 3-4 diagonal cuts on each side of the fish. This helps the marinade penetrate and cooks the fish evenly.
