Prepare the Black Beans

Rinse the black beans under cold water. If using dried beans, soak them in water overnight, then drain.

Cook the Beans

In a pot, combine the rinsed beans and 3 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 1 to 1.5 hours or until the beans are tender.

Sauté the Aromatics

While the beans are cooking, heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.

Add Spices

Stir in the cumin, salt, and pepper into the sautéed onions and garlic. Cook for another minute to toast the spices.

Combine and Simmer

Once the beans are cooked and tender, drain them and add them to the skillet with the sautéed mixture. Stir to combine, and add additional water if needed. Simmer for an additional 10 minutes to meld the flavors.

Finish the Dish

Remove from heat and stir in the lime juice and chopped cilantro. Adjust seasoning with salt and pepper to taste.
