Method
Preparing the Salmon

Season the Salmon
Pat the salmon fillets dry with paper towels. Season both sides of the salmon fillets with salt and black pepper.

Cook the Salmon
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the salmon fillets skin-side down. Cook for about 4-5 minutes until the skin is crispy. Carefully flip the fillets and cook for another 3-4 minutes until the salmon is cooked through. Remove from skillet and keep warm.
Making the Lemon Caper Sauce

Prepare the Sauce
In the same skillet used for the salmon, reduce the heat to medium. Add the unsalted butter and let it melt. Stir in the minced garlic and cook for about 30 seconds until fragrant.

Combine Ingredients
Add the capers, lemon juice, and lemon zest to the skillet. Stir to combine and let it simmer for 2-3 minutes.

Finish the Sauce
Remove from heat and stir in the chopped parsley. Drizzle the sauce over the cooked salmon fillets before serving.
Preparing the Homemade Potatoes

Preheat the Oven
Preheat the oven to 425°F (220°C).

Season the Potatoes
In a large bowl, toss the cubed potatoes with 3 tablespoons of olive oil, garlic powder, salt, black pepper, and chopped rosemary until well coated.

Bake the Potatoes
Spread the seasoned potatoes onto a baking sheet in a single layer. Bake in the preheated oven for about 25-30 minutes, or until golden brown and crispy, turning halfway through.
