Method

Fish Croquettes

    Prepare the Fish

    Boil the cod fillet and potato in salted water until cooked through. Drain and let cool.

    Make the Mixture

    In a bowl, mash the cod and potato together. Add chopped onion, parsley, salt, and pepper. Mix well.

    Form the Croquettes

    Shape the mixture into small patties and dip in beaten eggs, then coat with breadcrumbs.

    Fry the Croquettes

    Heat oil in a frying pan and fry the croquettes until golden brown on both sides. Drain on paper towels.

Calamares Fritos

    Prepare the Calamari

    Rinse the calamari rings and pat dry with paper towels.

    Coat the Calamari

    Dredge calamari in flour, dip in beaten eggs, and coat with breadcrumbs.

    Fry the Calamari

    Heat oil in a frying pan and fry the calamari until crispy and golden brown. Drain on paper towels.

Empanadas

    Prepare the Filling

    In a skillet, sauté chopped onion and bell pepper until soft. Add ground beef and cook until browned. Stir in chopped olives, salt, and pepper.

    Fill the Empanadas

    Place a spoonful of filling in the center of each empanada dough piece. Fold and seal edges with a fork.

    Fry the Empanadas

    Heat oil in a frying pan and fry the empanadas until golden brown. Drain on paper towels.

Fish Fritters

    Prepare the Fish

    Cook the white fish fillet until flaky. Flake the fish and set aside.

    In a bowl, mix flour, cornmeal, eggs, chopped green onions, salt, and pepper to form a batter.

    Heat oil in a frying pan. Drop spoonfuls of batter into the hot oil and fry until golden brown. Drain on paper towels.

Tostones (Picadillo and Seafood)

    Prepare Plantains

    Peel and slice green plantains into 1-inch thick pieces.

    Fry the Plantains

    Heat oil in a frying pan and fry the plantain slices until golden. Remove and flatten with a tostonera or the bottom of a glass.

    Cook the Filling

    In a skillet, sauté garlic, ground beef, and shrimp until cooked through. Season with salt and pepper.

    Assemble the Tostones

    Place the filling on top of each flattened tostone and serve warm.
